I grew up surrounded by family who loved gardening, growing produce, as well as cooking, baking, and preserving. I had my own little veg patch from a young age and vivid memories of my father teaching me how to ‘dib in’ leeks. We moved to Cornwall when I was six, where I spent the rest of my childhood. Enveloped in a culture where quality ingredients were abundant, the cooking was simple, but the tastes were amazing. A still warm homemade pasty, wrapped in paper, eaten on the beach, with sea air in your lungs, life doesn’t get better!
Background to Eat Your Greens
Fast forward to 2024, and after a 25+ year career working in Marketing in the Telecoms industry, I found myself at a crossroads. Leading up to my 50th birthday I started evaluating the things in life that really made me happy. A little bit of a cliché I know! It wasn’t the act of turning 50, I’ve never been one to get upset with getting older. It was more a sense of yearning to find an outlet that brings me joy, something that challenges me, and ultimately sharing this with like-minded people. Going out on a limb, and with a very supportive husband, I quit my job.
And that’s how ‘Eat your Greens’ was born.
Where did that spinach come from?
People who know me, especially my family, are very used to me insisting on having a little green on my plate – breakfast ordinarily aside. In the summer of 2024, I married the aforementioned love of my life at a beautiful villa in Tuscany. A location chosen for the incredible views, as well as the wine and the food of course! In his wedding vows, my husband made reference to the fact that I am a genius at managing to disguise and weave spinach (not his favourite vegetable) into a multitude of dishes. I can kill a houseplant just by looking at it, but give me a vegetable, or an outdoor plant, and it thrives!
All joking aside, I do love my greens, and not only for the taste but for the health benefits as well. Firmly ensconced in mid-life, I know it’s critical that we eat more of the dark, leafy green vegetables, alongside a healthy balanced diet for the whole family that is also rich in protein and fibre. And before you think my recipes will be all about the greens, don’t worry, I’m definitely all about the balance. You’ll find a feast of my favourite recipes here, from healthy spinach to tempting cakes and desserts.
Eat Your Greens ethos
So what will you get from my blog? Honest, home cooking for your family. Focused on using good ingredients, with sustainability at the heart, and not letting things go to waste. Open my fridge and alongside all the fresh ingredients – not many UPFs here! (Ultra Processed Foods) – you’ll find a load of jars and Tupperware keeping all of the leftovers, fermented produce, kefir, and more, ready to be thrown into another dish. A mantra very close to my heart is ‘waste not, want not’.
